Abstract

Ce rapport présente les conclusions d'un comité d'experts chargé d'évaluer l'innocuité de certains additifs alimentaires et de certains produits toxiques naturels et de fixer les doses journalières admissibles. Des normes d'identité et de pureté des additifs alimentaires ont également été établies par le comité afin que les substances soumises à des examens toxicologiques soient convenablement définies et correspondent bien aux produits du commerce. Les rapports publiés dans cette série, dont les débuts remontent à 1957, sont utilisés dans l'élaboration des législations nationales visant à garantir le bon usage des additifs alimentaires et à protéger les consommateurs de contaminants dangereux. Ils donnent , en outre, des avis utiles aux laboratoires de toxicologie au sujet des types d'études les plus intéressants pour l'évaluation de la sécurité des additifs alimentaires. Sont étudiées dans ce rapport les doses journalières admissibles de 25 additifs alimentaires (émulsifiants, préparations enzymatiques, aromatisants, solvants, épaississants, cires, autres substances diverses et la curcumine, le furfural et le bromate de potassium) et de 3 produits toxiques naturels (glucosides cyanogènes, glucoalcaloïdes comme la solanine et la chaconine)

Abstract

Summarizes the main conclusions reached by experts commissioned to evaluate the safety of selected food additives and contaminants. Available chemical, biological, and toxicological data are used to identify health hazards, establish standards for purity, and determine acceptable daily intakes for food additives. Evaluations cover food additives in the categories of enzyme immobilizing agents, flavouring agents, flour treatment agents, food acids and their salts, food colours, sweetening agents, thickening agents, and a miscellaneous group of additives
