Abstract: A state-of-the-art report on the latest advances in methods for evaluating the toxicological and chemical characteristics of food additives and testing their safety. Prepared by a 54-member task group, the book emphasizes methodological advances that have either confirmed the value of established principles for safety assessment or permitted the development of new procedures offering greater sensitivity and predictive value.
